Cashew nut cookies are my son’s favorite evening snack. This is a simple recipe with less ingredients. I give him four of these cookies as evening snacks twice or thrice a week. 


  • Cashew nut - 1cup
  • Dates - 8 or more if you need more sweet
  • Cinnamon or Cardamom powder - 1 teaspoon
  • Eggs - 2
  • Optional - raisins or pumpkin seeds for decoration


In a dry mixie or blender jar grind the cashew nuts into coarse powder.

Then add the dates and cinnamon powder and grind it for few seconds. Add the eggs and blend it into paste.

Line a cookie tray with parchment paper or baking sheet. Spoon in the dough with a table spoon as shown.

You can decorate it with raisin or a cashew nut or pumpkin seed, but this is optional. Bake these cookies for 12 mins in 185 degree. Allow it to cool.

With this dough you can make cookies in different shape. The below is one such cookie I made for my son for the Christmas celebration in his school.


Store it in an Air-tight container for a week in the shelf or in the refrigerator for more than a week.
