Ingredients:

Augergine - 1 no

Onion - 1 no

Garlic - 3 cloves

Almond flour - 1/2 cup

Oil - 3 tbsp

Coriander 

Salt

Chilli powder or Peper powder - as needed

 

Procedure:

Wash and cut the aubergine into small pieces. Heat the oil in the pan and saute the aubergine until it turns transparent. Remove it from the pan.

Chop the onion, garlic and coriander. Saute it in the pan. Add salt and chilli as needed.

Blend the Aubergine and onion mixture in the blender into coarse paste. Add Almond powder and mix it well.

Make small balls or flat circles from the coarse paste. Coat it with the Almond flour and shallow fry the balls in a pan.

The other option can be to dip in beaten egg. Fry both sides of the balls until golden brown and remove it from the pan.

Repeat it with the next set of balls and serve it hot.
